Depending on its age, the wines may show signs of time, such as dust on the bottles and/or damage to the labels—common in wines that have been stored for decades. The National Cellar ensures all wines are kept at the proper temperature and humidity, but it always preserves the visual appearance that reflects their age. We usually select brands or regions that tend to perform well in old‑wine tastings. However, wine is a living organism that, like everything else, is exposed to time, and even while sealed in a bottle its aromas evolve in various ways. Therefore, the National Cellar cannot be held responsible for the wine’s quality, given that it is an old wine. Our recommendation is to open the bottle and let it breathe first, which will help release the wine’s natural aromas after so many years closed. Avoid decanting, as this can be too aggressive for old wines. (illustrative image)
