It is a wine of pure pleasure, elegant, and that captures the essence of the old Dão wine, 100 % made from the region’s white queen grape, Encruzado. This emblematic Portuguese grape, when well worked in the vineyard and cellar, presents delicate aromas with notes of yellow‑pulp fruit, subtle citrus hints, and a touch of resin. It stands out for its great balance, low extraction, moderate alcohol level, absence of oak, freshness, and high gastronomic suitability. The vines, aged between 30 and 50 years, are mainly located in the sub‑region of Serra de Terras de Senhorim, renowned for its balanced production of elegant and fresh white wines. **VINIFICATION** The grapes were hand‑picked in 15‑kg harvest boxes and carefully transported to the cellar. There they were rigorously selected at the sorting table, then moved to the decanter and, by gravity, directed to a pneumatic press. A gentle pressing was performed, followed by fermentation in temperature‑controlled stainless‑steel tanks. After the completion of alcoholic fermentation, the wine was racked and subjected to malolactic fermentation in stainless steel, where it aged for six months before bottling. **PAIRING** Lightly seasoned dishes, shellfish, roasted fish, white meats, and pasta. Vegetarian suggestions: dishes with tubers (turnip, sweet potato, beetroot), legumes (chickpeas, beans, peas), and dishes with cheese.
