The grapes that make up this wine come from various sub‑regions of the Dão, where the vines are aged between 100 and 120 years. The vast majority of these grapes come from old vines, featuring a wide blend of typical regional varieties such as Tinta Pinheira, Tinta Carvalha, Baga, Touriga Nacional, Touriga Fêmea, Tinta Roriz, Alfrocheiro, Jaén, among others. The grapes were hand‑picked and, during the harvest, a first selection of the fruit took place in the field; only the grapes that met stringent quality criteria were brought in for pressing. They were gently transported in 15‑kg crates, and upon arrival at the winery a second sorting was carried out. Only the truly perfect bunches were then sent by gravity into the old concrete tanks (built in 1962), where natural alcoholic fermentation took place, without any addition of chemicals or yeasts. After clarification, the wine remained in the same concrete tank for malolactic fermentation. Twenty‑two months later, each tank was selected for the final blend of the Definido Tinto. The ideal glassware for serving is a Burgundy‑type glass. A total of 3,000 bottles of 0.75 L were produced.
