This Carm CM appears to have had a rather shy upbringing – a gentle, hand-harvested crush with maceration in a closed environment hinting at a cautious approach. Following a cool period in stainless steel, fermentation in French oak barrels – a bold choice – has introduced a subtle wood influence, beautifully balancing the wine’s inherent freshness and mineral character, so typical of the Douro Valley. The result is a surprisingly vibrant wine with an exceptionally long finish, ideally paired with grilled white fish or shellfish.
