Cartuxa DOC Alentejo. This wine links its quality to the name of the Carthusian monks, who since 1598 led a solitary life of prayer at the Convent of Santa Maria Scala Coeli in Évora. It was first produced in 1986. **Vinification** Made from Antão Vaz, Arinto, and Roupeiro grapes planted in the vineyards of the Fundação Eugénio de Almeida. Once the grapes reach optimal maturity, they are harvested and taken to the cellar where the process begins with full de‑stemming and gentle crushing. The juice is then fermented in stainless‑steel vats at a controlled 16 °C.
