Casa da Passarella Produced in Portugal, in the D.O.C. Dão region, sub-region of Serra da Estrela, this wine comes from poor granitic soils and a mountain climate. It is made from a wide range of native grape varieties such as Encruzado, Uva Cão, Bical, Terrantez, among others, from the 2019 harvest. It was crafted through a full skin‑contact process, with spontaneous alcoholic fermentation and total malolactic fermentation, keeping direct skin contact for one month. The wine then aged for a year in used 600‑liter barrels. The wine shows: total acidity 6.49 g/dm³, pH 3.47, and total sugars 0.5 g/dm³. Ready to drink now, but with great potential for bottle ageing. It pairs especially well with Serra da Estrela cheese, fish, and meat dishes. Winemaker: Paulo Nunes.
