This Abanico Reserva, straight from the Dão, is a beautiful demonstration that understated elegance can truly shine. Producers at Casa da Passarella, deeply rooted in tradition, have masterfully blended Touriga Nacional, Alfrocheiro, and Jaen – a combination that’s as perfectly balanced as a classic Portuguese custard tart. The fermentation, utilising extended maceration with the skins, delivers a complexity reminiscent of a fine wine from Borba. A year ageing in new French oak barrels has added a touch of refinement, and, crucially, the wine remains unfiltered for maximum freshness. It’s a fantastic match with beef.
