From a single 80‑year‑old vineyard comes Casa da Passarella’s Dão wine, O Énologo – Vinhas Velhas, which we use to assert the unique terroir of that plot. The old vineyard is a group of vines of about 24 different varieties (including some white varieties, as was absolutely normal at the time) that, over almost a century, naturally adapted to the site in perfect harmony. The harvest is hand‑picked in one go, and the entire blend is fermented in a traditional cement vat. The natural balance of the vines allows the fermentation to occur spontaneously, with no need to correct the must. In this way we claim our terroir – with a minimalist wine in our cellar. It contains sulfites.
