From a single 80‑year‑old vineyard springs the Dão wine, Casa da Passarella O Énologo – Vinhas Velhas, which we use to capture the unique terroir of that parcel. The old vineyard is a mix of roughly 24 different varieties (including some white grapes, normal for the time) that, over almost a century, naturally adapted to the plot in perfect harmony. Harvest is manual and single‑handed, and the whole blend ferments in a traditional cement vat. The natural balance of the vines allows the fermentation to proceed spontaneously, without any must correction. Thus we embody our terroir with a minimalist wine in our cellar: vinified in a cement vat with pre‑ and post‑fermentation maceration, then aged 18 months in oak barrels. It presents an opaque red colour, aromas of red fruit with spicy notes, and is full‑bodied, fresh and elegant, with a long, persistent finish. It contains sulfites.
