This rosé from Casa de Santa Vitória is a delightfully bold affair, having spent a full 8 hours on its skins – a clear chat with the Arinto and Verdelho grapes. The fermentation, kept cool at 14°C, has admirably preserved the vibrant acidity of these grapes, lending a refreshing character and a hint of red fruit. It would pair beautifully with grilled fish with chili sauce, or alongside some truly excellent cured meats.
