This Gouveio, Códega and Rabigato from Quinta da Cassa clearly benefited from meticulous care. The winemakers, with almost surgical precision, hand-picked the grapes, understanding that the success of a Douro white hinges on the smallest details. The slow, cool fermentation, meticulously controlled like a watchmaker’s work, combined with gentle pressing, ensures the full aromatic potential of the grapes is released with exquisite finesse. A four-month ageing in stainless steel, in a reductive environment, completes the process, resulting in an undeniably elegant wine with a wonderfully distinct terroir – ideally suited for pairing with grilled fish or ceviche, for instance.
