Let’s just say those 12th-century monks got the basics right – but this Castell d’Encús Acús is taking it to a whole new level. Cultivated in a ridiculously unique microclimate on the Encús mountains, it’s a wine that stubbornly refuses to be pinned down by time. Garnacha, Pinot Noir and Chardonnay join forces here, bringing a welcome burst of acidity that’s utterly greedy for flavour. It’s a wonderfully odd marriage of ancient tradition and modern winemaking, and frankly, it’s rather vibrant for a wine with such a long history. Seriously, pair it with some game – you’ll be telling stories for days.
