The wine producer Castell d'Encús is located in the mountains of Encús, in the Pallars region of Spain. The estate has a history that dates back to the 12th century, when monks of the Hospital Order established a village in the area. The monks also built nine stone‑etched fermentation tanks, which are still used today to produce wine. The current winery was founded in 2002 with the aim of restoring the history and tradition of wine production in the region. It operates according to the principles of organic viticulture, producing wines in small batches to ensure quality and uniqueness. The vineyards are spread across three sites, each with its own microclimate, and the varieties grown include Garnacha, Pinot Noir, Chardonnay, Riesling, and Macabeo. Castell d'Encús wines are known for their freshness and vibrant acidity, made through traditional methods with an innovative touch. The winery uses medieval stone fermenters, stainless‑steel tanks, and French oak barrels to create wines with varied tones and nuances. (illustrative image only)
