Since 1937, the company Caves do Solar de São Domingos has produced sparkling wines, aged spirits, bagaceira spirit, Bairrada and Dão wines. Its vaults hold over two million bottles of sparkling wine, thousands more bottled wines, and hundreds of French oak casks for its famed vinic spirits. The “São Domingos” Bagaceira spirit, produced in proprietary stills, continues to dominate the market with its classic quality. In 2006 a modern winemaking centre was opened, capable of processing a thousand tonnes of grapes from the company’s own vineyards and from growers working in partnership. Continuous innovation in production and winemaking methods has raised the quality and prestige of the house wines, reinforcing São Domingos’ competitive edge. Enotourism is also a winning bet, dazzling thousands of visitors each year with the beauty of the rock‑cut vaults, the millions of bottles, and the showroom, hall and museum featuring a tasting room—an integral part of the Bairrada Route.
