This sparkling wine is a commemorative edition marking the centenary of the Caves São João, made exclusively from Pinot Noir grapes. After a very delicate pressing of grapes harvested at the end of August, the must fermented for 15 days in stainless‑steel tanks at controlled temperature. Production, following the classic method, began in March 2016 with a draw using wild yeast; the secondary fermentation took place in the cellar for 25 days at 14 °C, after which the wine aged on lees for 48 months in bottle before disgorgement of the first batch in May 2020. It displays a yellow hue with pewter nuances. The nose reveals toasted almonds, toast, dried flowers, butter cookies, brioche, dried figs, honey, citrus peel, candied fruit, chalk, and traces of red fruit that dominate the aroma of this very rich and complex sparkling wine. It has a dry palate with excellent texture and creaminess, also showing a long lingering finish. With good aging potential, it is ideal to accompany fish—even with sauces—as well as poultry and other white meats, venison, cheeses, among many other delicacies.
