The Cesari Mara Valpolicella Ripasso is made using a historic Valpolicella technique called “ripasso.” After producing an Amarone, the grape pomace is added back to the classic Valpolicella and undergoes a second fermentation in tanks. This gives the wine added nuance, structure and power, resulting in a wine that is more intense than the traditional Valpolicella.
