This Armand de Brignac is a wonderfully patient testament to the Cattier family’s legacy. Aged within their frankly intimidating, gothic-Renaissance-Roman cave system – a dizzying 119 steps deep – it’s a champagne that’s clearly taken its time to mature. A truly impressive achievement, and one best enjoyed with a generous helping of fresh seafood, I’d suggest.
