Pinot Noir and Chardonnay, predictably contributing a vibrant acidity, all beautifully balanced with a refined sweetness. Frankly, it’s a safe bet with seafood or fresh cheeses, though I suspect it’d be utterly wasted on anything less than a truly decadent pastel de nata.
