This Pernand-Vergelesses from Chanson Pere & Fils has clearly enjoyed a bit of a rummage in the cellar – that intense, velvety texture hints at a post-bottling reductive influence, playfully testing its balance. Thankfully, the Chardonnay’s inherent boldness steps in, particularly if enjoyed young to allow those rich, opulent flavours to truly unfurl. It pairs beautifully with seafood, but trust us, it’ll hold its own with a good steak too.
