It is crafted from grapes grown on old vines in the Segovian villages of Moraleja, Aldeanueva, Codorniz, and Santiuste, hand‑picked at the optimal ripening point. The name is taken from the Greek goddess Circe, the heroine of one of Homer's Odyssey chapters. It pairs wonderfully with appetizers and foie gras.
