The pressed juice is stored in stainless steel tanks. Following clarification and yeast inoculation, it undergoes fermentation at a controlled temperature of 18°C. The winemaker then carefully blends the resulting wine – a ‘cuvée’ – to create the base Prosecco. This base wine is filtered and sweetened with cane sugar, before a second fermentation (using the Charmat method) takes place at a controlled temperature.
