Description

Sparkling wine crafted by the traditional method (champanerie) from specially selected base wines grown on Colet’s own estates. The presence of palo cortado and amontillado derived from the Palomino variety during the second fermentation—and especially in the final liqueur after disgorgement—adds a salty southern nuance that gives it a distinct personality. The base wine is a single‑varietal Xarel·lo, and the southern influence imparts subtle complexity. The collaboration between Navazos team members and Sergi Colet has produced sparkling wines with a Jerez influence.
