The 6,000 bottles per harvest of this “Collage” crafted by the Bierzo grower Aurelio Feo come from a vineyard in San Andrés de Montejos, a locale near Ponferrada, where the region’s queen white grape, Godello, is blended with clusters of Doña Blanca and Palomino. The wine rests for three months in contact with its lees to gain a silky texture and complexity on the palate—an attribute savoured in tasting. It pairs perfectly with fish and shellfish.
