“O Combro” – a wine steeped in family history – is crafted from vines in the Vilarinho de Cotas estate, where the distinctive slate “combros” dictate the winemaking process. This blend, reflecting the legacy of the Cálem house, utilizes indigenous yeasts and traditional foot-pumping in lagares to produce a wine brimming with ripe fruit and incredibly smooth tannins. After 18 months ageing in French oak, the result is a remarkably structured wine, a genuine echo of the Cálem’s heritage – a fantastic pairing with a slow-roasted black pork shoulder to really highlight its intensity.
