Description

Conde d'Ervideira Designation DOC Alentejo Harvest Mechanical and nighttime Vinification The grapes are destemmed and sent to vinimatics, where they remain for 6 to 10 hours at a temperature of 12 °C. They are then pressed and transferred to a refrigeration chamber, where they ferment between 10 °C and 12 °C. The alcoholic fermentation of Antão Vaz occurs in new Hungarian oak barrels for about one month, followed by a nine‑month period of barrel aging with batonnage.
