They are then pressed and transferred to a refrigeration chamber, where they ferment between 10 °C and 12 °C. The alcoholic fermentation of Antão Vaz occurs in new Hungarian oak barrels for about one month, followed by a nine‑month period of barrel aging with batonnage.
