Night harvesting, painstaking fruit selection, and a process that borders on religious devotion (three days in cold fermentation, pump-overs every three days, and barrel aging with the precision of a clockmaker) elevates the grapes to something truly exceptional. The influence of French oak (63% new, the rest used) – subtly tempered with concrete – is palpable, yet never sacrifices the vineyard’s structure and character. As Robert Parker, Vinous, and Jeb Dunnuck rightly noted (98/100), this Continuum is a wine best enjoyed alongside a perfectly grilled steak, or perhaps a succulent roasted lamb.
