Cortes de Cima This wine was produced exclusively from Syrah grapes. The grapes were rigorously selected for their optimal ripeness. They were fermented without agitation, at controlled temperatures, and with regular delestage, with an extended period of skin maceration to enhance the fruit aroma and achieve a good balance and tannic structure. It was aged for eight months in French oak barrels until bottling in July 2014.
