This Dão Álvaro Castro is a rather intriguing wine, born from an unexpectedly arid winter and a miraculous spring. The harvest, starting a week earlier than planned, revealed the Encruzado, Bical, and Malvasia Fina grapes were perfectly ripe – practically begging for expression. A slow, extended fermentation – two months, in fact – has only amplified this inherent complexity. It really demands a seafood feast, particularly with some fresh, vibrant vegetables, to fully unlock its nuanced character.
