The National Cellar is obliged to store all wines at the correct temperature and humidity, but it always chooses to preserve the visual appearance associated with their age. We generally select brands/regions that perform well in old‑wine tastings. However, wine is a living organism, like others, exposed to time, and even within a bottle its aromas evolve. Our recommendation is to open and let the bottle breathe first, as this will help release the wine’s natural aromas after so many years closed. Avoid vigorous decanting of aged wine, as it is too aggressive and may even “kill” the tasting. Enjoy the tasting. (image purely illustrative)
