This white wine is produced from Savagnin grapes grown on 30‑year‑old vines under organic farming. The hand‑picked grapes are fermented in stainless‑steel tanks, and after fermentation the wine is aged for six months in French oak barrels. Chantal and Jean Berthet‑Bondet established themselves at Château‑Chalon in 1984, and the following year they already produced their first harvest. In 2010 the entire vineyard was converted to organic production, and in 2013 their eldest daughter, Hélène, returned to Jura and took over the business. The estate covers 15 hectares of vines and produces all Jura wines made from the white grapes Chardonnay and Savagnin, as well as the red grapes Trousseau, Poulsard and Pinot Noir.
