This Savagnier from Domaine Berthet Bondet in Jura is a delightful reminder that patience *does* pay off. After a minimum of 15 years aging in oak barrels, you get a truly complex aromatic profile – think honey, dried fruits, and a hint of aged almond, all underpinned by that characteristic Jura salinity. It’s a fantastic match with aged cheeses like those made from sheep’s milk, or perhaps alongside some earthy mushroom dishes.
