This red wine is made from Pinot Noir, Poulsard and Trousseau grapes, sourced from a 15‑year‑old vineyard practicing organic production. The hand‑picked grapes undergo a one‑week pre‑macération and are fermented in stainless‑steel tanks, after which the wine matures for 12 months. Chantal and Jean Berthet‑Bondet settled in Château‑Chalon in 1984, and the following year they already produced their first harvest. In 2010 the entire vineyard switched to organic production, and in 2013 their eldest daughter Hélène returned to Jura and ultimately took over the business. The estate spans 15 hectares of vines and produces all Jura wines made from the white varieties Chardonnay and Savagnin, and the red varieties Trousseau, Poulsard and Pinot Noir.
