This Chenin Blanc, straight from the heart of Touraine, clearly had a rather contemplative youth. It spent 12 months aging *battonnage*, a technique favoured by seasoned wine makers to ensure the grape’s white skin remained true to itself – resulting in a complexity only time can bestow. A touch of French oak certainly added elegance, but the real secret lies in the grape itself, the terroir of the region, and its remarkable ability to pair beautifully with dishes like duck with orange or sheep’s cheese.
