Leaving Évora behind and following the aqueduct toward Arraiolos, we turn right after the Convent of Cartuxa—a good omen—to find a quinta named Santa: Quinta de Nossa Senhora da Conceição. Next to the 18th‑century main building (remodeled in 2006 by the current owners) is an old chapel, now a cozy shop and wine‑tasting room. The remaining 23 hectares of the estate host a vineyard, orchard, greenhouse, vegetable garden, and animal rearing—elements that weave together history, human ingenuity, and nature, all certified organic under U.S. and European rules. At one of the highest points of the terrain sits a 3.5‑hectare circular vineyard, the starting point of this Alentejano project. (illustrative image)
