Fermented 70 % in stainless‑steel and 30 % in oak (balsam and acacia) for nine months with bâtonnage, it was bottled in June 2025 and promises both early enjoyment and long‑term ageing. With 88/100 in 2008 and 87/100 in 2009, it pairs delightfully with crustaceans, grilled galo, baked robalo, and semi‑aged sheep cheese—proof that elegance can be both playful and precise.
