**Vinification:** The grapes, sourced from carefully selected plots on our Quintas de Ervamoira and Bons Ares, were hand‑picked and hand‑selected in small‑volume boxes. Grapes from Quinta de Ervamoira were vinified in granite vats, while those from Quinta dos Bons Ares were processed in concrete and wooden tanks. After pressing, the wine underwent malolactic fermentation in barrels ranging from 6,000 to 10,000 litres. It then aged for 18 months in a blend of 50 % barrels, 20 % new French oak barrels, and 30 % one‑year‑old oak barrels. The wine was bottled in May 2020. **Serving suggestions:** Pairs well with roasted meats, red meats, and even fish, such as oven‑roasted cod. It is also excellent with aged sheep‑milk cheeses. Store horizontally in a cool, dry place, out of light and temperature swings. Serve at 16 °C to 18 °C.
