Winemaking: The grapes, sourced from selected plots in our Quinta de Ervamoira and Quinta dos Bons Ares, were harvested and manually sorted into small baskets. Grapes from Quinta de Ervamoira were vinified in granite vats, while those from Quinta dos Bons Ares were vinified in wood and concrete tanks, with an extended maceration. The wine underwent malolactic fermentation in 6,000- and 10,000‑litre tanks. It then aged for 16 months in new first‑ and second‑year barrels. Bottling occurred in May 2017. Serving suggestions: Enjoy with roasted meats, red meats, and even fish such as oven‑baked cod. It also pairs beautifully with aged sheep‑milk cheeses. Store horizontally in a cool, dry place away from light and temperature swings. Serve at 16–18 °C. Consume responsibly.
