Denomination: AOP Chablis Terroir Carefully selected grapes cultivated on cool plots on slopes. Kimmeridgian argilo‑calcite marl, dotted with tiny calcite oyster shells shaped like commas (Ostrea Virgula) measuring only a few millimetres. This unique soil gives the wines original character and distinctive minerality. Nighttime temperatures are cool due to the vineyards’ northern aspect, helping preserve the grapes’ acidity and giving the wines excellent tension. Vinification and Aging The grapes are harvested at the peak of ripeness. The must is clarified with precision before fermenting in stainless‑steel tanks, with careful monitoring of temperature and fermentation kinetics. The wine is then aged on fine lees for 12 months; no bâtonnage was required in this rich 2023 harvest. Frequent tastings ensure optimal development of organoleptic qualities before the final blending step.
