Edouard Delaunay Denomination: AOP Gevrey‑Chambertin Pairings: This wine pairs wonderfully with spicy Mediterranean cuisine full of flavour. It is a perfect match for plum tagine, couscous or chicken pastilla. Presentation: The great village appellation in the north of Côte de Nuits, worldwide renowned. Originating from Dijon and later established in Côte de Nuits, the Delaunay family has always had a special affinity for this village, and its wines from this denomination have always stood out for their quality. Gevrey‑Chambertins are full‑bodied, delicious and intense wines, with notes of black fruit and licorice, often described as “masculine.” We hope you appreciate these characteristics in this great classic. Terroir: The vineyards of Gevrey‑Chambertin are among the oldest in Burgundy. Viticulture dates back to the 1st century AD. By the 6th century, Gevrey was already recognised as one of Burgundy’s best wines, thanks in part to the founding of the Abbey of Bèze in 640. The vines are planted at altitudes between 250 and 300 m on clay soils (marga) covered by rubble and iron‑rich red silts from the plateau. The gravel gives the wine elegance and finesse, while the clay‑rich margas and fossilised shells provide body and firmness. The slope has an east and southeast exposure, ensuring ideal solar exposure. Vinification: The grapes were harvested at optimum ripeness. Grapes from each plot that makes up this cuvée were vinified and aged separately, retaining 20‑25 % of the harvest in whole bunches. After a brief cold pre‑fermentation, vinification lasted about 20 days, with daily pigeages. After 5 days of final hot maceration, the wines were transferred to barrels (1/3 new oak) to age for 16 months before blending and bottling.
