Edouard Delaunay Filosofia Nuits-Saint-Georges, the village where our headquarters is located, holds a special place in our history. It is the gateway south of the great villages of Côte de Nuits, and this appellation produces wines of great diversity. The terroirs north of the village, close to Vosne-Romanée, feature clay soils that are deeper, giving rise to generous and structured wines. The southern terroirs, marked by very rocky soils and ancient quarries, produce more mineral, lively, and direct wines. A great Nuits-Saint-Georges should embody this duality, which gives it a unique character and excellent aging potential. Terroir Nuits-Saint-Georges is one of the most emblematic appellations of Burgundy. Its wines were already recommended in 1693 to King Louis XIV as a cure for various ailments. The three plots that make up this cuvée are located at the foot of the slopes, both north and south of the village, on limestone soils mixed with clay and marl. This combination confers both finesse and mineralism, as well as structure and richness. The vines face southeast, ideal for ensuring perfect ripening of the grapes. Vinification and Maturation The harvest is hand‑picked, with rigorous selection of the bunches to ensure only the highest quality grapes. After destemming, the grapes are placed in tanks and fermentation begins naturally thanks to indigenous yeasts. The wine ages for 15 to 18 months in oak barrels, 30 % of which are new, giving depth, structure and ageing capacity.
