This "elephantus algarve" certainly seems to have been born from a desire to bottle the wild spirit of the Algarve. The Borbón clearly lends a robust character, alongside ripe black fruit notes, beautifully complemented by the elegant Vicentão. It’s a wine that demands a good black pork roast to tame its intensity – or, for the truly adventurous, a wild mushroom risotto for a pairing that’s delightfully audacious.
