Encosta do Sobral vinification: Grapes come from two small plots of very old vines aged 65 and 93 years, yielding very low harvests (about 1500 kg ha⁻¹). The whole bunches are pressed, cold‑settled and fermented at controlled temperatures between 17–19 °C. The wine is aged for 14 months: 15 % in new French oak barrels, 45 % in stainless‑steel tanks and 40 % in used French oak barrels. Production is limited to 1700 bottles. Climate: Temperate Mediterranean with influence from the Serra de Tomar. Region: Tomar, Vinho Regional Tejo. Soil: Clay‑lime with slate outcrops. Winemakers: Marco Crespo and Frederico Gomes. Awards: 92/100 in *Revista de Vinhos* (2021 harvest). Allergen info: Contains sulfites.
