This Estoril do Sobral, born from the heart of the Tejo, is a delightfully unexpected gamble. The fruity notes are beautifully balanced by the gentle acidity of Viosinho and Sauvignon Blanc, a testament to the meticulous winemaking – fermentation at a cool 13°C in stainless steel, with a subtle influence of oak (50%) adding a welcome layer of complexity. The clay-limestone terroir, shaped by the Serra de Tomar, imparts a characteristic minerality, while enologist Marco Crespo and Frederico Gomes have clearly championed the Gouveio grape, allowing it to shine brilliantly. Perfect with grilled fish or a wild berry salad.
