This Ermelinda Freitas Sauvignon Verdelho, from the vineyards of Fernando Pó in Palmela, presents a rather considered expression. Fermented in stainless steel with meticulous temperature control, it lays the groundwork for aging that incorporates the subtleties of both French and American oak – a blend promising a touch of complexity. The addition of *batonnage* (lees stirring during aging) further enhances body and elegance, as if the wine is subtly absorbing the secrets of the land itself. Wonderful with fresh fish or a summer fruit salad.
