La Volée Blanc de Blancs is a multi‑plot sparkling wine that springs from clay‑limestone soils in the Sangalhos area. The vines, over 20 years old in the northern part of the region, are planted with the typical white varieties: Cercial, Bical and Arinto. Cercial and Arinto thrive on rich clay‑limestone soils, while Bical grows on franco‑arenous ground. The wine is vinified in stainless‑steel tanks, with part of the batch aged for 5–6 months in a 500‑L old French oak barrel (over ten years old). After the winter chill it matures in an underground cave sur lies for 12 months, following the second fermentation, with periodic pumping and remuage on classic pupitres to give the structure a great sparkling deserves. The entire bottle was disgorged manually, giving the wine its “à la Volée” name. Only 6,250 bottles were produced.
