In the Vadio rosé sparkling wine we aim to explore the versatility of the Baga grape. We selected a plot from a small farmer’s 30‑year‑old vineyard, where Baga’s vigor limits high ripening and acidity dominates. Whole bunches are pressed gently, followed by fermentation in stainless steel and used barrels. In February the lot is bottled and the tirage performed. After the second fermentation, the minimum lees contact lasts 18 months before disgorgement. With a light salmon hue and a very fine, persistent mousse, the nose offers plenty of fresh red fruit. On the palate it delivers vibrant acidity backed by freshness, balanced by the creamy mousse.
