Honouring the long tradition of sparkling wines in the Bairrada region, we reinvented the production of Vadio sparkling wine by ageing the base wines using the Solera method, which began in 2007 and now includes ten vintages in the base lot. The wine is made from Bical, Baga and Cercial, with each plot harvested individually in the morning and gently pressed whole clusters. Fermentation takes place entirely in barrels, followed by about six months of lees ageing. In the first months of the new year, roughly 30 % of the solera lot is drawn to make the new bottling, and the solera is again tested against the latest vintage’s wine, a cycle that repeats each harvest to ensure consistency and character. The second fermentation occurs in the bottle with a minimum of 18 months before disgorgement, yielding an aroma of great complexity and elegance—dominated by dried fruit, crystallised fruit notes and a hint of salinity. The palate is creamy and rich, with balanced acidity and deep layers of flavour.
