The classic Favaios is the youngest Moscatel that Adega de Favaios markets, yet it has also been produced for a long time—practically since the company’s founding. It is vinified traditionally with intense pellicle maceration to extract the maximum aromatic components characteristic of this grape variety. The skin contact lasts three to four days until fermentation is halted by adding wine brandy. The mixture of partially fermented must and brandy is then aged for three years, gaining harmony and complexity before the batch is ready for consumer enjoyment.
