Filipa Pato Region / DOC: Bairrada DOC, Portugal Certification: Organic (Certiplanet) and Biodynamic (Demeter / Demeter US) Vinification: The bunches are hand‑picked and selected. Partially destemmed, they ferment with indigenous yeasts in open oak vats, with some extraction (pigeage). After fermentation, the wine ages between 12 and 18 months (depending on the year) in 500‑600 L used barrels and 1500 L barrels. Before release, it rests another two months in the bottle. Tannic agent: None Sulphites: Yes Total acidity: 5.52 g L⁻¹ (tartaric acid) Residual sugars: 0.8 g L⁻¹ Soil and climate: The grapes come from three century‑old Baga vineyards (100–140 years) with a strong Atlantic influence, located just 15 km from the ocean. Facing east, they are on mid‑height slopes with lower Jurassic limestone soils. These soils contain high‑quality clays in depth, while the upper layer, whiter and richer in marl, delays the vegetative cycle, giving the wine a unique and exceptional balance. Food pairing: A great wine for the table! It pairs perfectly with simply cooked quality meats (lamb, veal, beef, pigeon, duck, pheasant, partridge, hare, venison loin). It also harmonises with noble small items such as thyme, veal kidneys, or veal liver in Venetian style with caramelised onions. Strong cheeses are equally excellent partners – Ami de Chambertin, Niza creamy, Castelo Branco or Serpa. Potential for ageing: Depending on the vintage, it can be aged between 30 and 60 years, or even longer under ideal conditions. It is recommended to serve decanted and cool (below 18 °C) in elegant glasses.
