The 18 days of open fermentation, allowing the skins to contribute their full exuberance, promise an intensely flavoured wine. Following ageing in oak barrels and a clarifying process using egg white, the result is a wine ready to drink, and one that would particularly shine alongside a hearty red meat dish.”
